Holiday Peppermint Brownie & Vanilla Cake Cupcakes

Get out your boxed-desserts for this one! This recipe simply adds a personal touch, special taste, and adorable cupcake. You can go ahead and frost those, however, my pantry didn’t have any and I didn’t have time to shop, however, I did have chocolate syrup which I used to lightly decorate the tops.
Ingredients
  • Brownie Mix – 1 box
  • Green Vanilla Cake/Cupcake Mix – 1 box
  • Peppermint Extract or Peppermind Schnapps – 1/4 teaspoon
Instructions
  1. Preheat oven to instructions on brownie package
  2. Prepare brownies as instructed, add peppermint extract, and fill cupcake liners with 1 tablespoon of batter (it’ll rise)
  3. Bake brownies for about 10 minutes (should be almost done) and cool for 5 mintues
  4. Prepare cake mix as instructed and pour about 1 tablespoon on top of mostly-baked brownies or until about a milimeter or two is left to the top of the cupcake liner
  5. Bake cake until completely done; cool and decorate as pleased
Notes
Brownie batter will just about double in size when cooked so you really don’t want a lot in the bottom of the liner[br][br]Cake batter doesn’t grow as much when baked, however, still leave some room for it to expand[br][br]Peppermint Schnapps was the first way I made this and it was delicous (just add 2 Tablespoons)[br]A buttercream frosting and crust candy cane would be lovely on top[br]Have fun with these! They taste so yummy and look amazing when you cut them in half to see both colors
